Kalita Wave
The Kalita Wave is a flat-bottom pour-over coffee dripper designed by Kalita Co. in Japan. It features a flat bed of coffee, proprietary wave-shaped paper filters with 20 crimped pleats, and three small drain holes in the flat base. This design produces remarkably consistent extraction with less sensitivity to pour technique than cone-shaped drippers.
The wave filter's crimped pleats hold the paper away from the dripper walls on all sides, creating an insulating air gap that maintains more consistent brewing temperature throughout extraction. The flat coffee bed and restricted drain holes regulate flow rate mechanically, meaning the brewer's pour speed has less dramatic impact on the final cup compared to a V60's open drain.
A typical Kalita Wave recipe uses 20 to 26 grams of medium grind coffee with a brew time of 3 to 4 minutes. The flat bed promotes even extraction across the entire coffee surface, reducing the channeling that can occur in cone-shaped drippers when water finds paths of least resistance through the grounds. This evenness contributes to a sweet, balanced cup with good clarity.
The Wave comes in stainless steel and glass in sizes 155 (1–2 cups) and 185 (2–4 cups). Its consistency and forgiveness have made it a favorite among both specialty cafés serving high volumes and home brewers who want reliably good pour-over without obsessing over pour technique. The trade-off is slightly less control over extraction nuance compared to the V60's open design.
