The Core Difference
Dual boiler machines have two separate boilers: one maintained at brew temperature (195–205°F) and one maintained at steam temperature (250–265°F) simultaneously. Heat exchanger (HX) machines have one large steam-temperature boiler with a copper pipe running through it — water for brewing passes through the pipe and reaches brew temperature via heat exchange. Both solve the same problem (simultaneous brewing and steaming capability) through different engineering approaches with different trade-offs.
Dual Boiler Advantages
Temperature stability is the dual boiler's primary advantage. Each boiler is maintained at its target temperature independently — brew temperature is exactly what the PID says it is, unaffected by steam boiler activity. After pulling a shot, brew temperature is immediately ready for the next one. For high-volume home use (back-to-back drinks for multiple people), dual boilers are clearly superior — no temperature recovery time between extractions.

HX machines heat faster (one boiler to temperature vs two), and many home baristas argue they produce shots with more character — the temperature variation inherent in HX design (slight temperature cycling as the brew water exchanges heat from the steam boiler) can produce different extraction nuances. HX machines are also typically less expensive than comparable quality dual boilers. The trade-off: temperature management is less precise without a PID on the brew circuit, and "temperature surfing" (or using a thermometer to time the flush) is required on older HX machines without PIDs.
