Why Water Chemistry Matters for Espresso
Water is 98% of espresso by weight. Its mineral content directly affects extraction: calcium and magnesium ions bond to coffee flavor compounds during extraction, pulling them into solution. Water with zero minerals (distilled) under-extracts — flavor compounds remain in the puck. Water with too many minerals (hard tap water) over-extracts some compounds and causes scale buildup in the boiler. The SCA (Specialty Coffee Association) target for brewing water is 150 ppm TDS with specific mineral balance.
The Three Approaches

Highly softened water: Water softeners replace calcium/magnesium with sodium — low scale risk but sodium doesn't extract coffee flavor compounds as effectively, producing flatter cups. Very hard tap water (400+ ppm): Rapid scale buildup requires descaling every 4–6 weeks and eventually damages boiler elements.
