Why Grinding Matters
Pre-ground coffee starts losing flavor within minutes of grinding. The aromatic compounds that make coffee taste vibrant and complex are volatile — they evaporate rapidly once the bean's cellular structure is broken open. Beyond freshness, grind uniformity directly determines extraction quality. When all particles are roughly the same size, they extract at roughly the same rate.
